Strawberry Lemon Sweet Roll Surprise

I was totally intrigued by the Rhodes recipe: Raspberry Cream Cheese Swirl. It looked beautiful & delicious, but I didn't have all the ingredients so a few adjustments were in order. Here's my own take on the original recipe. I'm going to call this one: Strawberry Lemon Sweet Roll Surprise. Again - more with lemons. Rhodes rolls + Lemons = something truly amazing.   undefined

• INGREDIENTS •

  • 12 Rhodes Dinner Rolls, thawed to room temperature
  • 4 oz. cream cheese
  • 1 egg white
  • 1/4 cup sugar
  • 1/2 teaspoon lemon extract - or juice
  • 1/4 c strawberry jam
  • 1/4 c chopped walnuts (optional)
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

undefined Cream jam, sugar, egg, cream cheese & lemon extract until smooth. undefined Fold in nuts. undefined Flatten your dough to a 4-6 inch circle. thinly spread cream cheese mixture & roll back up. undefined Place rolls, crease side down, on a baking pan & cover with sprayed plastic wrap. Let rise about 30 minutes (I put mine in the sun so they'd rise faster). Bake at 375º F for 15-20 minutes or until golden brown. undefined Combine powdered sugar & lemon juice & whisk until smooth. Drizzle over cooled rolls. undefined Enjoy your little sweet roll surprise!

Thanks, Kenny & Jordan! The recipe is so incredibly easy, I'm definitely going to keep experimenting with different 'fillings'!

Enclosing the strawberry jam, cream cheese, and nuts inside the roll is a great idea. I love lemon icing. I can't wait to try this recipe at home!
